Sunday

I cooked pancakes for the brunch in this morning. After that, I went hiking in the park which has lake. I went there around 4 pm and it was already darker outside that's because daylight saving time has finished in California so I just walked around there only 30 minutes. I'm kinda miss Summer time in California.... And my boyfriend cooked pasta for dinner and enjoyed spending time with him.
Hope everyone had a great time today as well!

Sunday

I cooked pancakes for the brunch in this morning.

After that, I went hiking in the park which has a lake.

This is correct but makes it sound like you there were a lot of parks there and you chose to go to the one with the lake.
You could phrase it "I went to the park and there was a lake", which sounds more like you seeing the lake when you went to the park. :)

I went there at around 4 pm and it was already getting darker outside that's because dDaylight saving time has finishedended/is over in California, so I justcould only walked around there onlyfor about 30 minutes.

I'm kinda miss Summer time in California....

I'm = I am, which isn't correct in this sentence.

And mMy boyfriend cooked pasta for dinner and I enjoyed spending time with him.

Hope everyone had a great time today as well!

I cookedmade pancakes for the brunch in this morning.

Native speakers in most languages omit some words making speech smoother. Technically, pancakes and most foods are 'cooked' but the word pancake implies that it is cooked, or it would be 'pancake batter' which is uncooked. Most natives would say they 'made pancakes'.
While 'in this morning' is understandable, usually natives would say 'this morning'. 'In this morning' would introduce a comparison to 'in that morning', which would likely be said 'I will make pancakes tomorrow morning' or 'Friday morning'.

After that, I went hiking in the park which has lake.

'which has a lake' or 'where there is a lake'

I went there around 4 pm andwhen it was already darker outside that'sgetting dark because daylight savings time has finished in California so I just. So I only walked around there onlyfor 30 minutes.

I lived bilingual in Germany for many years in childhood. Returning to America, I was an honor student thru college.
But I was always endlessly critiqued by my English teachers because I was still thinking like a German. I was always accused of being 'stingey with punctuation'. Thoughts that would be one sentence in German often should be two or three sentences in English. That's what you're doing here. English is crisper when each sentence has a single point.

I'mI kinda miss Summer time in California....

I not I am

And mMy boyfriend cookedmade pasta for dinner and I enjoyed spending time with him.

Consider that 'made' is often used instead 'cooked' when the food in question is understood to be eaten cooked. Imagine pasta served raw.
