We capitalize the first letter of the important words in a title, so level should be capitalized here.

Good morning! Today I don’t have any topics to talkingtalk about but i was thinking… in your opinion what is my English level?

Infinitive phrases (to <verb>) use the infinitive form of a verb, which means no -ing at the end.

I have nevernot done any testtests, such as the Cambridge English test, to verify my English level and I would like to know it. What I mean, is about my writing in particular, because you can’t know how I’m able to read or understand English when I hear it.

The second sentence here is not a complete sentence, it is missing a main clause. I edited it slightly to make the first phrase a main clause.

So, I hope to improve my English skills and I would like to achieve a higher level, like B2, but today I think I’m A1.

This is on the edge of a run-on sentence, personally I'd probably split this into 2 sentences (between "B2" and "but today"), but I don't think it's technically incorrect so I'll leave it as-is.
